The Avocado

Have you noticed the increasing presence of avocado based dishes on restaurant and even cafe menus recently? Whilst these slimy looking green things might not enamour you with their exterior beauty, once prepared they are rich and creamy and packed with good-for-you monounsaturated fats. In plain English? This means they are key for healthy hair, skin and nails and can aid in lowering cholesterol!  So you need to try, if you haven’t already.

Being the fruit of the avocado tree, this berry is in fact a superfood!  It contains over 20 different vitamins and minerals, and more potassium than a banana, which is known to reduce blood pressure.  The avocado is rich in oleic acid which is associated with reducing inflammation and having beneficial effects on genes linked to cancer.

As well as all these health benefits, these ‘alligator pears’ are high in anti-oxidants including lutein and zeaxanthin which is very important to keep your eyes healthy and lower the risk of macular degeneration and cataracts. 

So, get some avocado love in your diet – they are an excellent food, loaded with nutrients often lacking in the modern diet. They are weight loss friendly, heart healthy and I am telling you now, they taste incredible!

To give you some ideas of how to eat these delicious fruits, these are some handy hints and some of my favourite ideas below:

How do you get the flesh out of the avocado?

Avocado needs to be slightly squishy to touch through the skin

Halve the avocado by cutting a 360° slice around its middle, stopping once you reach the stone.

Remove stone from the middle – a spoon is often handy for this.

Cut into quarters and the skin should just peel off. You are then left with just the flesh

How to maintain the life of the avocado flesh

Once the flesh is exposed it can brown quite quickly.  Squeezing lemon or lime juice over the flesh can preserve its colour and keep it fresh and tasty!

Avocado on Toast

Pick your favourite bread and toast it!  Add butter if you like.

Get the flesh of the avocado as described above – mush it, chop it – whatever you fancy.

Add it to the toast – season with salt and pepper as required.  If you like spice, why not chop up some chillis and sprinkle?  And I always like to add a squeeze of lime.

And voila! Bon appetite.  Enjoy it with a nice fruit smoothie or your favourite coffee!

Avocado Salsa

Chop avocado flesh, chop tomato, chop red onion, chop coriander.  Combine.  Season with salt and pepper, add a squeeze of lime juice – and that’s it! 

Serve with fish, chicken, it goes with everything.  I especially love this with fajitas.  If you like a bit of fruit – chop some fresh mango and add to the salsa for a real fresh flavour.


Add avocado flesh, clove of garlic, lime or lemon juice to a food processor and blend.

Chop tomatoes and remove the seeds.  Chop red onion into small pieces. 

Add onion and tomato to the avocado mixture.  Season to taste.  That’s it!  You will have the most awesome guacamole which is an amazing accompaniment to fajitas or nachos.  Or, just eat it on its own.  Yummy!
